Use little at a time, cauliflower digestion is gassy.

Nutrition

5 g carbohydrates per 100 g of raw cauliflower (Wikipedia).
92 % water, no fat.
1 jar (0.5 L, 2 US cups) stores 235 g.
1 small cauliflower yields 2½ jars, or 590 g.

Compare with 28 g carbohydrates per 100 g of cooked white rice (Wikipedia).

Ingredients

  • One cauliflower

Tools

  • Food processor
  • Paring knife
  • Counter and sink

Steps

  1. Prepare your counter like an assembly chain.
  2. Cut the cauliflower in pieces small enough for the food processor.
  3. Shred the cauliflower.
  4. Transfer in jars.
  5. Rince and clean the tools.
  6. Time stamp/label the jars.
  7. Refrigerate or freeze.
